If you want me to be brutally honest with you, it's because we allow ourselves to become stressed. Until you understand this, you'll probably always have job stress. Now I know you don't want that, right? So...
Allow me to show you how to become stress free, in not only your job, but also in life!...
Tip 1: First things first
Ask yourself this...
Is job stress, any stress for that matter, really worth it?...
If you answered YES, I'd like to point something out to you. Firstly, stress is closely link to the causes of depression, and I can tell you this, depression is no joke, and can become debilitating. Anyway, to cut a long story short, stress can be a fire-starter for many serious health complications.
Trust me, I know! You see, I suffer from Multiple Sclerosis and if I become stressed, the results are catastrophic. So I've got no choice but to NOT allow myself to get stressed throughout life, and that includes workplace stress.
In hindsight, I feel really silly for allowing myself to become stressed, and as a result, worsen my condition. I even believe stress helped bring on my illness. The point is, I don't want you to, in hindsight, say the same sort of thing I just have...
I mean, bearing this in mind, is job stress really worth it? Of course not, nothing is more important then your health, period!
Tip 2: Mind your own business
Who do you work for? Let's suppose you work for a big company. Picture this, here's you suffering from job stress, while the company owners are out playing golf, or maybe relaxing on vacation, all off the back end of their employees efforts, and YES that includes YOU!...
How do you feel about job stress now?
Now don't get me wrong, I'm not suggesting that you become a slacker, or give anything less then 110% in your job, you just need to learn to put things into perspective, that's all!...
One more thing...
What happens if your workplace stress becomes so bad that you end up ill because of it, and you can't return back to work???? You guessed it, your employer will just hire someone else to take your place and company life goes on while you're sick at home, debilitated!...

Tip 3: Stress management techniques.
When people start to suffer from workplace stress, often their first thought is, "How can I reduce stress at work?". Though this isn't a bad thing, it's far better to tackle the cause of the problem, YOU! If you disagree with this, fine, but why is it that two people can be put into the same 'stressful' situations, but one person gets stressed while the other doesn't?...
This is down to a person's values and beliefs. This is the reason for tips 1, 2 and 4, the purpose is to help you realign your values and beliefs so you can better rationalise those situations that have caused you to have job stress...
With all that said, I do understand that nobody is perfect and even if you have rock solid foundational values, from time to time, you might still suffer from workplace stress, and in that case will need to use some effective stress management techniques.
Exercise is a great way to relieve stress, aim to get the blood pumping. Also, don't underestimate the power of a good balanced healthy diet. You should also consider herbal teas to reduce stress at work. In particular, thought to be good are...

I'm sure you can appreciate, this approach is only treating the symptoms of job stress, meaning that if the same 'stressfully' situations were to arise again in the future, you'll just end up stressed again. This is why you MUST tackle the cause!
